Sweet Brunch Recipe: Strawberry Muffins

Warmer weather and the arrival of spring means one thing: party season! Host a brunch for your friends and neighbors to enjoy the weather and some delicious recipes. Brunch is the perfect combination of your breakfast and lunch favorites. This strawberry muffin recipe is easy to make, oh so delicious and perfect for a brunch party when served up in “mini” size!

Try serving these muffins alongside fresh strawberries since they’re plentiful now that strawberries are in season. In fact, try setting up a whole strawberry dessert table at brunch. Fill the table with all sorts of strawberry delights like these muffins, strawberry shortcakes, strawberry pancakes, and more! Yum!
Strawberry Muffins Recipe:
  • 3 cups flour, all-purpose
  • 1 ½ cups sugar
  • 1 cup butter
  • 4 large eggs
  • 1 teaspoon vanilla extract
  • 1/3 teaspoon lemon extract
  • 1 teaspoon salt
  • 1 teaspoon cream of tartar
  • ½ teaspoon baking soda
  • 1 ½ cup strawberry jam
  • 2 cups diced strawberries (finely diced)
  • ½ cup sour cream
Directions:
      Cream the butter, sugar, vanilla, and lemon extract until fluffy. Add the eggs, one at a time, beating after each addition. Stir together the flour, salt, cream of tartar, and baking soda. Combine the jam, strawberries and sour cream. Add the jam mixture to the flour and butter mixture, stirring until combined. Do not overmix. Fill greased or lined mini-muffin tins about 2/3 full and bake at 350 degrees F. for 15-18 minutes or until golden brown. Top with a dusting of powdered sugar!
